EU server of course. Unless you do not want Germans in the game…
There's often more going on American servers, but the problem is the times. If you want to play in the evening at 18:00, most Americans are still working or at school.
It is always useful to take an EU or European server there's also spoken / written English if that is important to you.
On a US server, the connection may be bad (high latency / latency) also comes the time zone. If you want to gamble at night it is still pretty early in the US.
