You should be able to pre-order the PS5 soon. I would do that on Amazon. However, I've never done anything like this. How does that work? Do I have to pay when I pre-order or when it is delivered? Does it arrive on the release date? Is there a limited pre-order number?

You must specify the payment method when you pre-order. However, the amount will only be debited after the goods have been dispatched.

May be, but can also come 1-2 days later.

Amazon only accepts as many (pre) orders as they can actually deliver.
