Stream with 3 gaming monitors on Twitch or on YT?

I would like to get two more screens soon (all 3 screens are the same) and put them into operation in order to expand my streaming equipment. My questions about this would be:

If I play on all screens, how does the gameplay translate to my streams on Twitch / YT? Will only the middle image be shown in the stream?
Does the PC's performance suffer if I use all 3 screens?
How are your experiences to work or to gamble on 3 monitors?

My gaming PC:

CPU: Intel i9-9900K
Mainboard: ROG Maximus XI form
CPU cooler: ROG Strix LC 360 RGB
RAM: Corsair Vengeance RGB PRO 64 GB
Graphics card: GeForce RTX 3090 OC 24 GB
Power supply: BE QUIET! Dark Power Pro 11

I recommend streaming with OBS (Open Brodcaster Software). You can set which of the games should be shown in the stream.

Make a scene (call it the best stream).

I recommend you to take a window picture.

Logical. But with your specs that shouldn't be a problem. (Of course, depending on the game & setting)

I also have three monitors myself and have to say that it is a good plus. I don't know if it's necessary because two are enough.

As a designer, I need three monitors. Photoshop, templates or examples, Google Spotify and much more. When I'm designing, three monitors are almost too few. But it works. Three monitors are a real luxury for gaming. But I grant you.

Thank you so much for your answer. I play the Flight Simulator 2020 myself and think that 3 screens are good for it. I also use OBS-Studio for my streams. I would like to use one screen in my stream for chat, one for gaming and the third for OBS. That was the plan
