I recently purchased a large bundle of copyrighted music from Humble Bundle with appropriate licenses. The licenses allow me to use the music largely without restrictions.
So my question is: Can I tell Youtube or Twitch somewhere that I own the rights to the music? Ideally before I upload a video / stream to prevent the video / stream from being blocked and not having to worry about the activation afterwards.
No, that is not relevant in this case, because YouTube or wherever you upload it must also have the rights.
If they license their music, they will hardly ask Youtube to block their music.
