The game mode is used to reduce the delay between signal and image reproduction so that control commands can be displayed promptly. It has been a setting in the menu structure of television sets for almost 10 years now.
In order to achieve the lower delay, various image post-processing (contrast adjustment, sharpness, dynamic brightness, etc.) are switched off as long as the mode is active. The image quality suffers while the input delay is minimized.
If you want to avoid this compromise, you can alternatively buy a computer monitor - unless the size is the decisive factor.
I don't think it needs much except 120Hz and maybe 4K if you want to!
