I would like to play F1 2020 with my friend on my Xbox one, the split screen is not particularly cool, so I wanted to buy a second one and then an HDMI splitter, is it then possible for everyone to have their own screen (only have 1 Console), if that's not possible as I described, can someone tell me how it works?

Not at all.
HDMI is a point to point signal which excludes that in itself. But there's still a device that would be able to do this:
An HDMI wall scaler with 1x2 function
