I streamed for fun and set up donations. 50 euro came in, of which 20 as a test from me. I will never stream again because I don't enjoy it anymore. Do I have to state the 50 euro somewhere? If yes, where? Or can I donate to an organization and don't have to indicate anything?

The donation is linked to PayPal if you have set it up so that what goes to PayPal goes to the account. So your 50 euro are in your account.
