I was thinking about getting an Xbox Series S but I only have a Full HD monitor but can get 165 Hz and has HDMI 2.0. Could I get 120 fps even if I have HDMI 2.0 and Full HD monitor?

Yes! That should work.
Even if your monitor supports it, you can activate features such as ALLM, which promises lower latency, and VRS, which results in a smoother picture, without your monitor having to be HDMI 2.1 capable.
Please note, however, that the Xbox Series S of the 120-FPS titles is more on par with the Playstation 5 and not the big brother of the Xbox Series X. Doesn't mean 120fps on the XBOX Series S in Warzone, for example.

There are simply titles that would be too expensive for weaker consoles than the Xbox Series X.
That is why Warzone does not run, for example, on the Series S with 120fps.
